You know what they say, breakfast is the most important meal of the day. But for some reason, it’s the easiest to skip. How many of us actually have breakfast?
A lot of us skip this meal because we wake up late, have places to be, or maybe we just don’t know what to eat. This might be especially true for college students, who have early classes and not enough time to make meals, or we don’t want to put in the effort to make the meal ~ which is real
But breakfast doesn’t have to be some big, elaborate meal. Omelets and avaocado toasts are great, but for people who might not have that type of time, here are three quick, easy recipes that don’t take much effort.
When I have in-person classes this is my favorite meal because it’s fast, takes almost no effort, and it’s on-the-go! Not to mention it tastes so good!
Now, you can attempt to make your own oats, or you can buy some instant oats. Just put them in a bowl and add some hot water. Then, you add your toppings. (That’s my favorite part)
I like to add peanut butter and berries, but you can add bananas, granola, honey even. Whatever you like. It sounds soo good just talking about it.

Egg muffins are a fun meal. Its a great meal prep recipe, because when you’ve made a batch you can store them in your fridge for later.
You make your eggs and add any ingredients to them. Then you pour them into the muffin pan and bake them in the oven. And that’s it, it’s so simple!

Now, this one may require more time, but it’s perfect for anyone attending class virtually. Now the picture above is fancy, when I make this recipe it’s a little less complicated.
I get my two pieces of bread, I fry my egg separately and place it on the bread, (it’s not in the bread). Then I add my tomatoes, cheese, sometimes bacon, and of course the pesto!
It tastes amazing and a healthier option than most sandwiches you might get from a restaurant.
